Cooking Instructions
Grilled Cutlassfish
- Lightly season the cutlassfish with salt and allow it to rest briefly.
- Cook in an oven or frying pan over medium heat until golden brown on both sides.
- Cooking directly from frozen can help retain the natural juices for a moist texture and rich flavor.
Braised Cutlassfish
- Slice radish and potatoes and arrange them on the bottom of a pot. Place the cutlassfish on top.
- Add a seasoning sauce made with Korean red pepper flakes (gochugaru), gochujang, and other seasonings, then bring to a boil over high heat.
- Once it begins to reduce, add chili peppers, green onions, and onions. Simmer over low heat until the fish is fully cooked and the seasoning is well absorbed.
Cutlassfish Soup
- Add the prepared cutlassfish, Korean chili peppers, and zucchini to boiling water and cook until the fish is nearly done.
- Add cabbage and season with salt to taste.
- For a spicier flavor, add Korean red pepper flakes or sliced red chili peppers as desired.
