Blackfin Flounder (Mijuguri) sashimi is known for its chewy texture and rich, nutty flavor. Wild-caught flounder harvested during the peak season from April to June is especially popular for its freshness and taste.
It is commonly enjoyed as sekoshi style sashimi, thinly sliced with the bones included, giving it a unique crunchy texture while remaining tender and easy to chew. With its clean, mild flavor and very little fishy taste, it is also perfect for Korean cold raw fish soup (mulhoe) or spicy sashimi salad (hoe muchim).
The more you chew, the more savory umami flavor and pleasantly firm texture you can enjoy.
