Although flat in appearance, it has surprisingly thick flesh with no small bones.

In Korea, freshly caught turbot from local waters is expertly cleaned and immediately frozen to preserve optimal freshness.
Every morning, freshly harvested fish from the waters around Jeju are gathered at the Hallim and Seogwipo fishing ports, brought in by Hallim and Seogwipo Fisheries Cooperatives.
