Oil flounder has relatively soft, delicate bones, making it ideal for sekkoshi-style sashimi. Enjoy it simply with chojang (Korean sweet & spicy vinegar sauce), or use it to prepare Korean spicy sashimi salad (muchim-hoe) or refreshing mulhoe (cold raw fish soup).
