How to cook

1. Use plenty of water. Use a larger pot and more water than you would for wheat noodles.
2. Add the noodles and stir once or twice. Stir gently once or twice so they don't stick together. Do not stir excessively.
3. Cook, then rest. Cook uncovered for about 5 minutes. Turn off the heat, cover the pot, and let the noodles rest for another 5–6 minutes.
4. Rinse in cold water. Rinse thoroughly under cold water and drain well before serving.

How to enjoy

• Toss with perilla oil, soy sauce and crushed roasted seaweed for deulgireum makguksu.
• Serve cold with a dipping sauce, or in a spicy gochujang dressing.
• Buckwheat cooking water: add it to soups or stews for a deeper flavor, enjoy it warm like a tea, or use it to help remove grease from dishes.
